- 1/2k chicken, cut up
- 1 Tbsp soy sauce
- 1/8 tsp pepper
- 2 Tbsps cornstarch
- 1 Tbsp garlic, minced
- 1 medium onion, sliced
- 1 carrot, sliced
- 1 medium red bell pepper, cut into squares
- 1 tsp grated fresh ginger
- 1 can (237g) pineapple chunks
- 2 stalks green onion, cut into 2" pieces
- 2 tsps cornstarch,dissolved in 1Tbsp water
- 1 tspsugar
- 1 1/4 cups water
- cooking oil
- salt to taste
Procedure:
- Season chicken with soy sauce and pepper. Sprinkle with cornstarch. Fry until golden brown. Set aside.
- Saute garlic, onion, ginger, carrot and bell pepper.
- Add water, salt and sugar. Simmer for 5 minutes.
- Add chicken, pineapple chunks with syrup and dissolved cornstarch. Cook until thick. Add green onions.
