Pakbet

My husband is an Ilocano and I learned this recipe from my husband's father.
Ilocanos are nationally known for their Pakbet. It is mixed vegetables in fish(anchovies) sauce/paste. Simple yet delicious.

Ingredients:
  • ½ k pork with fat, cut into small pieces
  • ¼ cup garlic, minced
  • ½ cup onions, chopped
  • 1 tbsp ginger, sliced
  • 3 tbsp cooking oil
  • 4 tbsp water
  • 1 tbsp bagoong
  • ½ k tomatoes, sliced
  • 1k eggplant, sliced lengthwise then crosswise
  • ¼ k small bittermelon (ampalaya), cut in half
  • 10 pcs okra
  • ¼ k squash, cut into cubes

Procedure:
  1. Cook pork in 2 cups water then drain or deep fry if desired.
  2. Saute garlic, onions, ginger and tomatoes in cooking oil then add and saute pork.
  3. In a bowl mix water and bagoong. Strain and pour into sauteed mixture. Bring to boil
  4. When boiling, add all the vegetables then close lid. Cook until all vegetables are cooked.
