Ilocanos are nationally known for their Pakbet. It is mixed vegetables in fish(anchovies) sauce/paste. Simple yet delicious.
Ingredients:
- ½ k pork with fat, cut into small pieces
- ¼ cup garlic, minced
- ½ cup onions, chopped
- 1 tbsp ginger, sliced
- 3 tbsp cooking oil
- 4 tbsp water
- 1 tbsp bagoong
- ½ k tomatoes, sliced
- 1k eggplant, sliced lengthwise then crosswise
- ¼ k small bittermelon (ampalaya), cut in half
- 10 pcs okra
- ¼ k squash, cut into cubes
Procedure:
- Cook pork in 2 cups water then drain or deep fry if desired.
- Saute garlic, onions, ginger and tomatoes in cooking oil then add and saute pork.
- In a bowl mix water and bagoong. Strain and pour into sauteed mixture. Bring to boil
- When boiling, add all the vegetables then close lid. Cook until all vegetables are cooked.
