Ingredients:
- 18-20 pieces lady fingers
- 1 cup milk
- ½ gallon mocha ice cream, slightly softened
- 3 cups semisweet chocolate chips
- 2 tablespoons butter
- 2 ½ cups all-purpose cream, divided
- 1 cup chopped cashew nuts
- 1 225-gram pack (8 oz) cream cheese
- 1 ½ cups powdered sugar
- 1 teaspoon vanilla extract
- 1 cup chopped nuts for sprinkling
- cherries for toppings
Procedure:
- Soak lady fingers in milk. Arrange in a 13" x 9" pan or similar size glass dish.
- Spoon mocha ice cream on top and spread evenly. Freeze until ice cream is firm.
- In a double boiler, melt chocolate chips, butter and 1/2 cup of the all purpose cream. Divide mixture into two.
- Into one mixture, add nuts. Chill until slightly firm. Reserve other mixture for topping.
- Spread chilled chocolate-nut mixture over mocha ice cream. Return to freezer.
- In a bowl of electric mixer, beat together all purpose cream, cream cheese and powdered sugar until almost stiff. Blend in vanilla extract. Spread over the chocolate layer. Freeze until firm.
- Just before serving, drizzle the reserve chocolate mixture over the top. Sprinkle with nuts and decorate with cherries.
