Chocolate Mocha Delight

Layers of mocha ice cream chocolate and cream cheese make this dessert a winner every time. Make sure to prepare it at least one day ahead to allow enough time to freeze.

Ingredients:
  • 18-20 pieces lady fingers
  • 1 cup milk
  • ½ gallon mocha ice cream, slightly softened
  • 3 cups semisweet chocolate chips
  • 2 tablespoons butter
  • 2 ½ cups all-purpose cream, divided
  • 1 cup chopped cashew nuts
  • 1 225-gram pack (8 oz) cream cheese
  • 1 ½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts for sprinkling
  • cherries for toppings

Procedure:
  1. Soak lady fingers in milk. Arrange in a 13" x 9" pan or similar size glass dish.
  2. Spoon mocha ice cream on top and spread evenly. Freeze until ice cream is firm.
  3. In a double boiler, melt chocolate chips, butter and 1/2 cup of the all purpose cream. Divide mixture into two.
  4. Into one mixture, add nuts. Chill until slightly firm. Reserve other mixture for topping.
  5. Spread chilled chocolate-nut mixture over mocha ice cream. Return to freezer.
  6. In a bowl of electric mixer, beat together all purpose cream, cream cheese and powdered sugar until almost stiff. Blend in vanilla extract. Spread over the chocolate layer. Freeze until firm.
  7. Just before serving, drizzle the reserve chocolate mixture over the top. Sprinkle with nuts and decorate with cherries.
